Jamaican Jerk Chicken

Jamaican Jerk Chicken   Ingredients:
  • 1 to 1.2kg chicken whole bird (backing out)
  • 50g (3 tbsp) Shaury’s Jamaican Jerk Spice
  • 100ml (6 tbsp) cooking oil
  • 2 tbsp (30ml) fresh lime juice
  • 1 tsp salt
     
Cooking Methods:
  1. In a bowl, mix 3 tbsp cooking oil, 1 tsp salt and 2 tbsp lime juice as blasting purpose.
  2. Rub the chicken with 3 tbsp of cooking oil and season chicken with 50g Shaury’s Jamaican Jerk Spice. Marinade minimum 20 minutes.
  3. Prepare the oven/grill set temperature of 225°C. Place chicken, skin side up and basting chicken with lime mixture every 20 minutes (2 times), cook about 40 minutes. Hold the chicken in the oven for 10 minutes at 75°C.
  4. Remove the chicken from oven; let rest, covered with foil for 10 minutes.
